Welcome to our final report about Disney Food Blog’s recent trip to Ireland for the #RaglanRoadTrip!
We are a couple days back from the Raglan Road Master Chef Class in Ireland! And after recovering a bit from the go-go-go pace and jet lag, I’d like to share with you a few more glimpses into my time there.
Today, we step into the kitchen to get behind-the-scenes insight into how Chef Kevin Dundon and his team create the recipes that we enjoy on Raglan Road’s menu and during special functions.
Creating the Recipes
If you followed along during our coverage of the #RaglanRoadTrip, then you know that Master Chef contest entrants were tasked with creating a three-course menu that would be featured at Raglan Road’s upcoming tenth anniversary celebration this October.
As it turns out, this exercise set the stage for the curriculum in cooking school this week!
Chef Dundon took each of the finalists’ menus, chose one dish, and refined it. The resulting collaboration turned in five dishes that were at once original and recognizable — but also over-the-top delicious.
Watching the process was interesting in that it gave each of us the chance to see how recipe development for Raglan Road takes place.
Starting with the seed of the finalists’ recipes, Chef Dundon and the finalists experimented with the dishes and tweaked until they were just right. He cooked as the finalists took notes. And at the end of the day, each person tested how well they paid attention by cooking the dish all over again. (They all did great, by the way.)

It’s a big week for us here at Disney Food Blog! While AJ has been busy reporting to you LIVE from the kickoff of Disneyland’s 60th Anniversary Celebration, I’m in Ireland with Raglan Road Irish Pub and Restaurant!
But what does that have to do with Disney, Brooke?
Haha — Excellent question!
As we previously reported, Raglan Road Irish Pub and Restaurant will celebrate its Tenth Anniversary this Fall, and they’re doing it up BIG! To mark the occasion, they sponsored a Raglan Road Master Chef Contest. Read more about it here.
Welp — the five finalists have traveled to Ireland to spend time soaking up the atmosphere, fine tuning their culinary skills, and honing their attention to detail with Master Chef Kevin Dundon!
Raglan Road tries to bring a slice of authentic, contemporary Ireland straight to Walt Disney World. We see it in the decor of the pub and their menu. We’ve had the opportunity to dine at some of Chef Kevin Dundon’s favorite spots that provide inspiration for the menus at Raglan Road, including brunch at Herb Street in the heart of Dublin.
But I couldn’t leave Dublin without a stroll on Raglan Road, the street that inspired the poem…that inspired the song…that inspired the Pub that we all know and love.
Today, we leave Dublin and head for County Wexford, where we’ll spend time watching the Raglan Road master chef finalists hone their skills at Chef Kevin Dundon’s Dunbrody Country House Hotel. Hopefully we’ll get to know what makes Raglan Road tick.

Spring is underway and with it has come a rush of notable news throughout Disney. And at Disney World especially this week, we’ve seen tons of big stories — including rumors of new restaurants, new meals, new menus, and even a Food and Wine Festival update!
The biggest news is that the new Trader Sam’s Grog Grotto “soft” opened at Disney Polynesian Village Resort yesterday. Crowds were off the charts (6 HOUR WAIT TO GET IN!), but we’re putting a First Look post together and will have pics for you tomorrow morning (including this awesome Nautilus drink, thanks to DFB reader Lori Hope Fries)! Yay!
But back to the Epcot Food and Wine Festival, 2015 is a big year in the history of the event as we celebrate 20 years of Eating and Drinking Around the World.
We’ll bring you every detail and dish as the news unfolds, but in the meantime, this week, we have word of the very first acts lined up for the Eat to the Beat Concert Series!

We recently enjoyed sampling some of Raglan Road’s new menu items. And today, we’ve got some news for you about how they plan to celebrate their upcoming Tenth Anniversary!

Disney Parks and Resorts are busy decking the halls with magical holiday decor.
And this year, there’s a new gingerbread display featuring Frozen characters at Disney’s Contemporary Resort! The character depictions received a Mary Blair transformation and they are simply adorable! Of course, we really love the Frozen themed treats.

Time to dig into another delicious dish at Raglan Road!
The authentic Irish pub, located at Downtown Disney in Orlando, is one of our favorite spots for its warm atmosphere and fantastic live entertainment. But the food is incredible too. Fans obviously agree that it’s the total package — the pub was awarded Best Restaurant honors by Orlando Magazine earlier this year.
And Chef Kevin Dundon has knocked it out of the park on this one. (Well, he does that quite often, but that’s beside the point.) I first had Smokie City — a chunky, hot, cheesy dip that features potatoes and the rich flavors of smoked fish — at the recent Signature Dinner that I attended at Raglan Road. Chef Kevin was on hand to present each course, and while they were all first rate, this one was my favorite. I loved it so much that I made it for a recent family dinner!
And after you read about it, I think you’re going to want to make it, too. So here’s the recipe!
Smoked Haddock, Potato, Tomato, and Vintage Dubliner Cheddar Bake
If you can’t find smoked haddock, go for an all-natural, firm smoked fish such as cod or coley. I also used Irish cheddar cheese.

Orlando Magazine has recently announced its annual Dining Awards for 2014, and the Downtown Disney restaurant has taken the coveted top spot for Orlando’s Best Restaurant.
Writer Joseph Hayes credits Chef Kevin Dundon’s energy and menu influence with the success of Raglan Road. But it’s more than that, he says.
The restaurant, a series of faithfully restored bars and furnishings from ancient Old Country pubs, has the feel of a genuinely family-run restaurant (which it is). It gives Dundon a place to use traditional recipes and farm-fresh ingredients as a leaping point for new, satisfying and occasionally surprising ideas such as a killer twist on smoked haddock & Dubliner cheese dip or a wine-infused broth and seafood he calls ‘It’s not bleedin’ Chowder!’ The combination of New Irish cuisine, a pint of ale and a wink from a high-stepping Irish lass is hard to beat.

Anytime I can enjoy an evening at Raglan Road, I know it’s going to be a good one.
The Irish pub, located in Walt Disney World’s Downtown Disney, is well known for its authentic atmosphere and delicious, modern twist on Irish food. And the nightly live music and dancing makes it one of the best values in all of Disney. It’s dinner and a show all in one!
But recently, we had the opportunity to attend one of Raglan Road’s special dining events, the March Signature Dinner.
Part dinner, and part opportunity to launch a new book detailing the history and recipes of Raglan Road, we couldn’t wait to take part. Read on to see pictures of the evening, as well as some of the interesting dishes we had the opportunity to enjoy.
If you haven’t had the chance to pop into Raglan Road for a pint and a meal, you should take care of that as soon as possible. If you have any interest in pubs, this is a place you want to see.
Authentic is an apropos descriptor here, as much of the inside of the pub actually came from Ireland. Bars and fixtures were salvaged from churches and pubs.
We have explored the beautiful space in other reviews; click over to our last lunch review to take a bit of a tour. For today, we’re going to stick to the event.
As guests arrived we checked in at the podium and were ushered through the main dining room, around the bar to the left, and into the Raglan Room. The room is a cozy spot with lower ceilings than the main dining room. A partition separated the room from the rest of the pub for the dinner.
Seating for the event consisted of six or so large tables with an open arrangement; there were no assigned seats.
And here’s where I apologize for all the wonky light. It was very bright early in the evening, and then very dark later on. While it made for lovely views to watch the light ebb, it didn’t do my pictures any favors. Still, I’m hopeful you’ll get an idea of what a beautiful event this was.
The tables set just the right tone, with an elegant, farmhouse feel. A close up of our table gives you a better idea of the setting. I loved the white tablecloths and kitchen towels that would serve as napkins.
The fresh flower centerpieces and candles were a beautiful touch as well.

Raglan Road fans will want to tune in to the new PBS Cooking Show, Modern Irish Food, starring Celebrity Chef Kevin Dundon!
Yup! This Disney Chef has his own TV show! Awesome! Who says Disney World is just burgers and ice cream?
In case you haven’t been there, dining at Raglan Road Irish Pub & Restaurant in Downtown Disney Orlando is a consistently yummo experience. On the menu — contemporary Irish dishes such as Dalkey Duo Sausages, Bangers and Booz with Guinness Stew and Mashed potatoes, and Keen Eye for Shepherd’s Pie! Plus the best soups in the whole wide world.
AND — Kevin Dundon was my very first interview waaaaay back when I started DFB in 2009. He was so kind and generous with his time; a true blue kind of guy. So let’s support his superstardom and tune in!
Kevin Dundon’s Modern Irish Food Show will air in Central Florida and on PBS stations across the United States. It’s been picked up by Create TV (part of the PBS family) for February 2014. Episodes will air at 2PM Saturdays on WUCF-TV in Central Florida through December 21, 2013.
With award-winning chef Kevin Dundon at the helm, this new television series will focus on Irish cuisine made with local herbs and veggies. Just like at Raglan Road, Dundon gives viewers a modern look at traditional Irish dishes.
Based on his new cookbook, Kevin Dundon’s Modern Irish Food, the series will culminate with a “Christmas Made Easy” segment.
The show was filmed at Dundon’s four-star Dunbrody Country House Hotel & Restaurant, Cookery School and Spa, in Ireland. Check your local listings as episodes began airing October 26 in the Orlando area.

Nov. 16 – Fish, Hunt and Harvest: Kevin prepares smoked mackerel with a black currant Jus. Also: Skeaghanore duck breast with black cherries, pickled wild mushrooms, sautéed garlic potatoes and to finish, a spiced apple with Killowen yogurt.
