Risotto Around the World

Ah…time to talk about one of my very favorite side dishes EVER!!! Risotto is often overlooked, but the creamy savory goodness that is risotto could easily take center stage in a dish (and does in some of these highlighted below)! Disney chefs have mastered the art of making this slow-cooked yumminess — rice patiently mixed with flavorful broth — and whether it’s mixed with meat, fish, or vegetables, risotto doubles as as a sophisticated recipe and mouth-watering, comfort food.

I was looking through our Disney Food Blog Flickr group and saw so many gorgeous photos of risotto that I simply had to do a post about this dark horse side dish. (Of course, I’ve added a few of my own photos as well…;-D.)

Let’s take a tour around the world…

Butternut Squash Risotto from Artist Point

This butternut squash risotto topped with pork belly is easily in my “top 5″ risottos in Disney World. Offered at Artist Point in the Wilderness Lodge, the hint of sweet from the squash and tartness courtesy of the cranberry drizzle create amazing (and memorable!) flavors. Sigh. I miss it.

Dungeness Crab Risotto with Blood Orange Sauce and Pea Shoots; from Artist Point

This ample portion of risotto is mixed handsomely with crab creating a decadent appetizer. (Looks amazing!!!) Dishes at Artist Point tend to change seasonally, yet Dungeness crab seems to be used in many dishes — like these crab cakes we highlighted earlier this week!

Review: La Luce by Donna Scala

I’ve been SO excited to write this review; I can’t wait to introduce you guys to what has become one of my favorite Italian restaurants of all time. (Yep, this is the place that has that amazing butterscotch pudding.)

La Luce by (California celeb chef) Donna Scala is located in the middle of Disney World property at the Hilton Bonnet Creek Resort. The restaurant is a great juxtaposition of sleek lines and cool tile coupled with warm leather, soft pillows, and bright chalk artwork…on actual chalkboards. No kidding — the artists work [Read more…]

The Big Deal About Butterscotch Pudding

“Holy delicious!!” “Not to miss.” “Crazy good.” These are the kinds of reviews I’d been hearing about the butterscotch pudding at the new La Luce by Donna Scala at the Hilton Bonnet Creek Resort. That’s right; butterscotch pudding. Like, the stuff you remember from when you were a kid that came out of a box or a plastic cup and was pretty much what was left over after everyone else ate the chocolate pudding. I was skeptical to say the least. I’ve clearly never been a butterscotch pudding fan.

But my favorite review — and the one that made me finally want to close the book on this dessert — was from’s food critic, Jim Webster: “There are other options beside the butterscotch pudding. They may even be good. Ignore them.”

It turns out this stuff even has its own facebook fan page.

Fast forward to my recent Orlando trip where we got the chance to head over to La Luce (the Hilton Bonnet Creek is located between Downtown Disney and Disney’s Hollywood Studios, inside the WDW gates) and finally try it.

La Luce Butterscotch Pudding

And, yeah. This is not the pudding you remember from your lunch box — or even from your grandma’s homemade recipe. Made with 12-year Macallan Scotch, the pudding is velvety rich, and creamy. There’s no hint of [Read more…]
