Disneyland Recipe: Matterhorn Macaroons

Today, we are heading back to Disneyland for some inspiration in the kitchen!

I recently stumbled upon this brilliant recipe by Rumbly Tumbly. While my attention perked up as soon as I saw a recipe for one of my favorite Disneyland Treats, the Matterhorn Macaroon, I was even more excited to see that one of my DFB posts had inspired the author to try her hand at recreating the treats in the first place!

Shannon’s version looks so much like the original and sounds so chewy, moist and delicious. I’m definitely inspired to try my own hand at these giant treats!

Matterhorn Macaroons

Inspired by the Original Treat at Disneyland
Makes 12 Macaroons

Ingredients:
1 cup room temperature butter
1/2 cup granulated sugar
1/4 tsp vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon coconut extract
1 cup sweetened, shredded coconut – see note below for how to prepare coconut
2 cups all purpose flour
1/4 teaspoon salt
1 bag of Wilton Bright White Candy melts
decorators sugar for sprinkling

Since this location serves dinner only, you’ll want to plan your Advance Dining Reservation accordingly. And note that the dessert menu can change at any time!

Speaking of, if you’re not able to get it at Turf Club when you visit, you can always make it at home!

Disney Recipe: Macaroni and Cheese from Jiko at Disney World’s Animal Kingdom Lodge

I have a super special treat for you today!

I know I’m not the only person in love with the Macaroni and Cheese at Jiko, right? This signature restaurant at Disney’s Animal Kingdom Lodge — and this dish in particular! — regularly tops my list when I’m visiting Disney World.

And when you run into me having dinner here, chances are better than great that I’ll be enjoying their Oak-Grilled Filet with a side of their amazing Mac and Cheese.

While the filet is a mainstay on their menu, the side dishes that it’s paired with tend to change up regularly. But Jiko created a legend with the filet and cheesy goodness combo; it had legions of fans! So normally, even if the mac and cheese isn’t on the menu, you can request it.

Disney Recipe (and Happy Hour!): Monorail Drinks from Top of the World Restaurant at Disney’s Contemporary Resort

I have an old souvenir book from my first trip to Disney in the late seventies. And while it’s super fun to look through the whole thing, some of my favorite images are from Disney’s Contemporary Resort.

It’s here that I first learned about Top of the World, the restaurant that once occupied the spot that California Grill calls home these days.

Well, the seventies glamour that epitomized the Contemporary may have given way to a sleek mix that is both modern and retro at once, but we don’t have to look too far to bring some of those fun days back. Thanks to Disney cookbooks, their cocktails live on!

That’s right! I’m talking about those famous and delicious Monorail Drinks!

Disney Recipe: Strawberry Twists from Maurice’s Treats in Disneyland

I’m missing Disneyland, and all the fabulous food that you can get there today. But I’m also seriously craving a treat to go with my tea, so I think it’s high time to discuss one of the newer pastries that you can get in the Happiest Place on Earth.

Disney Recipe: Gratin de Macaroni from Les Chefs de France in Epcot

Macaroni and Cheese — that glorious food that is both side dish and main dish.

But one of my favorite grown up versions is the baked Gratin de Macaroni at Les Chefs de France in Epcot’s France Pavilion.

The dish is so well loved that it’s even made its way onto the menu over the years for the Epcot Food and Wine Festival in the France Marketplace Booth. Will it make the cut for the 2014 Food and Wine Festival? Only time will tell!

But for the mac and cheese lover, this dish has everything! Sharp, tangy Gruyère cheese, golden crust, and it’s plenty big enough to share — if you want to! (Confession: Usually I don’t want to.)

But what are you to do if your next advance dining reservation for this wonderful spot is months off, and you’re craving some of this awesomeness, like, yesterday???

Disney Recipe from the Vault: Cinnamon Rolls from Main Street Bakery in Magic Kingdom

Ahhhhh. cinnamon rolls. How I love thee. You are the undisputed Breakfast of Champions. And the best of the lot, in my opinion, were the ones available at Pre-Starbucks Main Street Bakery in the old days.

Now, I’m not jumping on Starbucks. I know that lots and lots and lots of you are super happy the Siren has moved into Main Street Bakery. But…well…I mean, just look at this.
