All right, friends… we’re going in. Welcome to THE EDISON!
The new, highly anticipated spot is currently open to walk-up guests in Disney Springs. (If you’re hoping to visit on or after January 15th, you can make reservations via OpenTable now.) And while the location is meant to provide some long-awaited adult nightlife to Disney’s shopping, dining, and entertainment district, it will be open throughout the day (starting at 11:30 am) and family-friendly until 10:00 pm.
When the clock strikes 10…
… it turns into a 21-and-over space only (with a $10 cover charge on Thursday, Friday and Saturday nights kicking in at that time) with specific entertainment just for grown ups (though this is a jazzy version of a Taylor Swift song, so, hey).
But no matter when you visit, here’s what you’ll find…
The Industrial Gothic theme (a/k/a Steampunk) is expressed in ever corner of the establishment. The setting is rich and lavish, with true antique pieces making up much of the decor (as opposed to the designers “aging” new items).
There is plenty of seating to go around, from cozy couches to open tables.
And that’s a good thing, because the whole “highly anticipated” thing is already bringing in BIG crowds!
Did I mention there are bars? There are. Three, to be exact. For instance, there’s the Boiler Bar…
And the Breaker Bar!
I have to admit… it’s pretty gorgeous. AND that third bar is upstairs!
Wanna know what they’re serving?
Below you’ll see The Edison’s unique craft cocktails known as Edison Signatures. The steampunk theme is further played out in the names of drinks like Gears & Cogs, The Flying Apparatus, and the Boiler Mule.
The Mistress is made of Stoli Elit Vodka, Amaro Montenegro, and sparkling Domaine Chandon with pomegranate and lemon.
The Boiler Mule combines Reyka Islandic Vodka and Ancho Reyes for some spice with cider, ginger beer, and cinnamon.

Don’t forget to check out the Mocktails, too! We’ll be sure to take a look at the entire (extensive!) drinks menu in our full review coming soon. But for now, let’s see the food you can order to soak up some of those beverages.
You can click directly on the image below to enlarge it and fully check out the options, which include Deviled Eggs, the Dancin’ Corn Dog, and Hawkers’ Box of Balls (lamb meatballs) among the appetizers.
And let’s waste no time, because I know you noticed it on the menu: the DB “CLOTHESLINE CANDIED BACON.”
PROS: It’s BACON.
CONS: It’s sort of creepy just hanging there (You can see a video on my instagram…). And there’s not a lot of it for $12.
But served with sour pickles and mostarda (like a jam with candied fruit and a mustard base), it’s actually really delicious.
Entrees offer more American eats with a twist including comfort foods like Old Fashioned Meatloaf and Gravy, Crispy Fried Chicken, and an Organic Tomato Soup & Gooey Grilled Cheese (to the tune of $20. Still, I’m intrigued.) Offerings also include The Edison Burger.
The burger is made with The Edison’s signature beef blend of sirloin, shortrib and brisket. It comes topped with cabot cloth-bound cheddar, onion rings, smoked bacon, house-made pickles, lettuce, tomato, and a special sauce.
Oh, and remember how I said this place was family-friendly for lunch and dinner? Well, here’s a look at the menu just for the Kiddos… otherwise known as Junior Scientists!
I hope you save room on your first visit to The Edison. Because LOOK at the Dessert Menu!
It includes a Lollipop Tree (with cheesecake pops) and the Black Cherry Cream, which is vanilla gelato that’s been super candy-fied with sour cherries, gummi poppers, a rainbow pop, whipped cream, and Nerds.
(I don’t see the rainbow pop…do you?)
But there IS a huge pixy stix (stick?).
Yeah, this thing kinda looks gross, but it tasted OK. I’d probably put it in the category of the “over the top desserts that are fun, but not worth the price” like all of those supernova shakes at Planet Hollywood.
