Pastry and Desserts

Laurent Branlard is the executive pastry chef for the Walt Disney World Swan and Dolphin Resort. A native of France, Branlard is a highly accomplished pastry chef who holds the distinction as the only two-time winner of the World Pastry Team Championship. You can expect to taste a wide assortment of delicious desserts which will include:

  • Friday: The all chocolate choux, Lime pistachio dome – pistachio daquoise, Carrot cake – pineapple comfit, cream cheese panacotta, Strawberry vanilla sundae, lemon madeleine, caramelized almonds, whipped cream
  • Saturday: Caramel sea salt éclair, vanilla whipped cream and comfit ginger pears,
    Chocolate fondant, orange pate de fruit milk chocolate crémeux, orange cream, Lemon meringue cup, lemon gelee and frangipan, Chocolate cake and vanilla sundae, caramelized banana, peanuts and whipped cream
