At long last… Wine Bar George has been confirmed as coming to Disney Springs!
Headed by Master Sommelier George Miliotes (you may be familiar with him from the earliest days of California Grill), this spot will be located across from Jock Lindsey’s Hangar Bar and next to Raglan Road’s Hole in the Wall. George Milioties is one of only 230 Master Sommeliers in the world.
We learned the news while attending the most recent Party for the Senses (a 2016 Epcot Food and Wine Festival Special Event), where Triton Tinta de Toro 2014 was served to represent the upcoming spot.
And Disney released a few further details today. Though we don’t know the opening date yet (other than it’s set for Fall 2017), we do know that Wine Bar George will be serving small plates, with around 7-12 items on the menu. These seasonal items will be ready to pair with the more than 100 bottles and glasses of wine available “in a range of varietals, vintages and price.”
The 210-seat wine bar will be built to resemble a “winemaker’s home estate,” and featured wines will represent established wineries as well as “up-and-coming growing regions and wineries.” What else will be on the menu? Special events, featuring educational — and fun — visits from renowned winemakers!
So, for those playing along at home 🙂 , we’ll be keeping an eye out for at least three new Disney Springs offerings in 2017: Wine Bar George, The Polite Pig, and The Edison (this does not include the still-unconfirmed Walt’s Restaurant and the Neverland Tunnels). And the Planet Hollywood Observatory and Paddlefish are still to come this year. So this means that even though the major transition of Disney Springs is complete, there’s still no shortage of new dining adventures coming to Disney World’s shopping, dining, and entertainment district!

Was down in Disney Springs yesterday for the first time in a year and was just amazed. It really looks great, and as a fan of some adult beverages, the places they are opening there are just fantastic. Spent some time at the Boathouse lakeside bar, and then had a great lunch at Morimotos and everyone in the group loved it. Once this Wine Bar and Edison open, this will definitely be a 2 night destination on our next big family trip.
As for Paddlefish, I suppose it is possible that it opens by the end of November, but it looked like it wasn’t even close yesterday … unless the 3 levels of exterior work they were doing were all facade and not setting up for any interior spaces.
