This spring, Wine Bar George is set to open in Disney Springs, and we’ve got some scoop for all of you wine lovers out there who are eagerly awaiting news on this upcoming spot!
As you may already know, Master Sommelier George Miliotes was a member of the opening team at the Contemporary Resort’s California Grill, then managed the signature restaurant from 1995 to 2002. There, he worked with Ron Rupert, who was also a member of the opening team and has just been announced as the Executive Chef for Wine Bar George!
Chef Rupert also served as part of the opening teams at Animal Kingdom Lodge’s Jiko as well as Ariel’s at the Yacht and Beach Club. Looking towards the future, Chef Rupert and Sommelier Miliotes have worked together side by side to create the upcoming menu for Wine Bar George, with options meant to pair well with the wine list which will feature more than 100 selections by the glass and bottle.
Chef Rupert shared: “The menu will include a selection of small plates, shareable plates, cheese and charcuterie boards, and desserts. Offerings will feature seasonally relevant items and everything will be made in-house. I’ve worked jointly with George to develop a menu that represents both global and local cuisine. Guests can expect to experience food that is familiar, yet new all at once.”
Guests will be able to peruse that wine list and food menu in a two-story, 6,000-square-foot-space with seating for 210 people. The space will be made to resemble a winemaker’s home estate offering a welcoming and warm atmosphere.
According to Sommelier Miliotes, “Guests will experience a feel reminiscent of the ‘Old World’ as if they are on the bottom floor of a gravity-flow winery surrounded by their best friends. The upstairs floor includes seating for groups of all sizes, space for private events and sweeping views of Disney Springs.” And among those aforementioned friends will be visiting renowned winemakers and special events which will allow wine drinkers of all kinds to expand their knowledge.
