In case you’ve missed the last year of us freaking out over their huge and delicious cookies, decadent cakes, and amazing cold brew, Gideon’s is a bakery in Disney Springs that has become hugely popular since it opened this location in January 2021. Each month, they have new seasonal flavors of all their treats, and it’s no surprise that the lineup for February looks incredibly tempting!

For the month of Valentine’s Day, Gideon’s is bringing “pure Passion” to their confections with new cookie, cake, and cold brew options.

The February cookie is called the Velvety Five Flavor Chocolate Cookie, which is “laced with [a] special house-made Ancho, Cayenne, and Cinnamon Spice Mix, infused with a magical essence of cherry and topped with Chocolate Covered Cherries.” According to Gideon’s, the heat level is medium. If you’re in love with the chocolate-cherry combination, this cookie sounds like a taste of heaven. You’ll be able to find this cookie every day in February, while supplies last.

The cake of the month is the Eternal Flame Cake, which is “a 3-Layer Double Frosted Chocolate work of art.” The cake has a layer of Red Cherry Buttercream inside and is covered with Chocolate Fudge Buttercream that’s been infused with a little bit of “Eternal Flame spice.” (We’re assuming that’s the same spice mix as the one in the cookie? But we’ll let you know for sure when we try these treats out for ourselves!)

On top, there are beautiful cherry-flavored roses and a red ganache drip. This cake is available by the slice starting today, and then it’ll be available each Saturday and Sunday in February. (There’s a limit of 2 slices per customer.)

The cold brew flavor for this month is called Fire & Iced Coffee, which is a “smooth Mocha Nitro Cold Brew with a warm spicy finish.” There are red sugar crystals on top as well. This “love potion” is available every day, all month long at Gideon’s. And if you’re feeling a little spicy, you can ask for some extra heat in your drink!

As always, Gideon’s has also got a new character and story behind these treats! Valentina Broccha is the face of this month’s collection, and Gideon’s has said that she’s the source of the “secret history of Valentine’s Day.” How mysterious!

There’s a new merchandise collection for the February treats that features Valentina, including a t-shirt, sticker, and print. You can get the shirt and sticker online or in the stores, but the print is only available online.

And for all the pin collectors out there, there are a couple of new pins that celebrate that Fire & Iced Coffee, including a Fire Gargoyle…

The ⁣pins are in stores and online now. We can’t wait to try out the February treats at Gideon’s Bakehouse! We’ll be heading into Disney Spring soon to bring you a full review of the new offerings. Remember that Gideon’s is a VERY popular spot, so you may have to join a virtual queue in order to go inside.

Talk to the Cast Members out front to see what the wait time is when you visit. It’s not unusual to wait for a few hours after joining the virtual queue, so we’d recommend heading to Gideon’s first thing when you arrive at Disney Springs and then shopping around or getting some food while you wait!
