During my recent trip to Walt Disney World for opening week of the 2013 Epcot Food and Wine Festival, I got the chance to visit the BoardWalk Inn and Villas right out side of Epcot.
I love that resort for the close proximity to both Epcot and Disney’s Hollywood Studios. But there’s another great reason to stop by: you’re steps away from BoardWalk Bakery!
And wouldn’t you know it, as I was walking by the bakery I read a twitter message from someone that mentioned a brand new cupcake! I had to stop in and check it out! (Thanks to whoever tweeted that, by the way!)
Lemon Blueberry Cupcake
We know that the Disney pastry chefs just lurve the whole lemon-blueberry combo, as do I. We’ve seen it pop up on menus from the Cinderella’s Royal Table (see my dinner review here) to Yachtsman Steakhouse (and here’s my account of dinner there), and lots of other places, too. (A moment of silence for Jiko’s House-Made Meyer Lemon Curd with Blueberry Compote, White Chocolate Biscotti, and Sour Cream Ice Cream.)
So it was no surprise that now we have the Lemon Blueberry Cupcake!
I pounced on this one in a heartbeat, even leaving behind a couple of my favorites, like the Salted Caramel Ganache and Lemon Meringue Tart, just so I could try it!
Out of the container, Disney cupcake connoisseurs will note that the Lemon Blueberry Cupcake has the same basic construction as other Boardwalk models: Cake, fluffy mound of buttercream, garnish around the edge, and fruit on top hinting at what lies within(ooooh, foreshadowing…).
Even though the garnish looks a little like mozzarella cheese (I know, right?!?), I assure you, it’s white chocolate. 🙂 You’ll notice that there isn’t a ton of color here. But that’s ok. Flavor is way more important to me than crazy colors.
Cut it in half, and the rest of the story is revealed: the center of the lemony cake houses a very generous amount of beautiful blueberry filling!
The buttercream on top is faintly flavored with lemon, but the real citrus note comes from the cake.
And the cupcake itself is delicious!
Now, if I were making an AJ’s Version of the Lemon Blueberry Cupcake, you know there would be some lemon curd (!!!!!) in there somewhere. Pooled on top in the middle of butter cream? Blueberry cake with a lemon curd filling? I’m not sure. But I would want that in addition to the blueberry filling, which makes the cake moist and delicious.
And since blueberries are a superfruit, this could totally be a healthy breakfast. Right?

Oh, I would so make that a treat or a breakfast! I just happen to have a jar of lemon curd on hand right now; I should think about baking something, immediately. I got to try one of these when I was down there for the Food and Wine, also. I was actually looking for a different cupcake (that I read about on your blog!), but the worker steared me towards this gem. The day I was there, he said it was the first day they were offering it and I had to try it. And it was delicious!

I am SO bummed! This seems to be a seasonal cupcake. I didn’t see it in the display case when I went last week so I asked and the CM went into the back to check. When she came back she said they don’t have them anymore and that it was currently the Pumpkin cupcake.
