In 2023, there are a lot of Disney World restaurants opening — specifically in the EPCOT Resorts area.

So Pretty!
We have already seen Carousel Coffee open at the Disney’s BoardWalk Resort earlier this year. We are still looking forward to The Cake Bake Shop opening this summer. The Dolphin Hotel is also getting a new restaurant, Rosa Mexicano. We now have an official opening date for it.
According to the Swan and Dolphin website, Rosa Mexicano is set to open on March 19th. Rosa Mexicano will offer “an elevated fiesta dining experience” which will include signature menu items and award-winning margaritas.

The menu at Rosa Mexicano will offer a contemporary interpretation of authentic Mexican cuisine which will include beloved classics and innovative dishes that pay tribute to Mexico’s richly varied culinary regions. Over 100 varieties of tequila and agave-based spirits will be featured. The restaurant’s signature frozen pomegranate margarita (which was named the best in New York City!) will also be available.

We have seen Rosa Mexicano’s food at the 2022 Swan and Dolphin Food & Wine Classic. Here we had their Roasted Mushroom Taco — it’s made with Shitake, Cremini, Oyster Blend, Pasilla Chile, Green Apple Slaw, Sliced Avocado, Queso Fresco, and a Corn Tortilla.

As we learn more about the menu and pricing, we will be sure to share it with you. However, reservations are now available for dinner and are highly recommended. You can make those on the Walt Disney World Swan and Dolphin website.
