Disney Recipe from the Vault: ‘Ohana’s Cheesy Scalloped Potatoes

I have been known to post an ode or two to extinct Disney foods. And one of my most missed dishes are the Cheesy Scalloped Potatoes that used to be a fixture at ‘Ohana at Disney’s Polynesian Resort.

These potatoes — in all of their creamy, cheesy goodness — are no longer served at ‘Ohana. In their place, you’ll find a perfectly, well…fine…bowl of Lo Mein, noodle-y tangle.

Fine. But they’re no cheesy potatoes.

So imagine how the skies opened and the heavens sang when I recently ran across this recipe for the potatoes that we all knew and loved!

Now, I don’t see any shortening here, but everything else looks pretty fantastic. So I’m going out on a limb and am planning to give them a try.

You should, too.

Disney Recipe: Smokie City from Raglan Road Irish Pub and Restaurant PLUS New Signature Dinner Announcement!

Time to dig into another delicious dish at Raglan Road!

The authentic Irish pub, located at Downtown Disney in Orlando, is one of our favorite spots for its warm atmosphere and fantastic live entertainment. But the food is incredible too. Fans obviously agree that it’s the total package — the pub was awarded Best Restaurant honors by Orlando Magazine earlier this year.

And Chef Kevin Dundon has knocked it out of the park on this one. (Well, he does that quite often, but that’s beside the point.) I first had Smokie City — a chunky, hot, cheesy dip that features potatoes and the rich flavors of smoked fish — at the recent Signature Dinner that I attended at Raglan Road. Chef Kevin was on hand to present each course, and while they were all first rate, this one was my favorite. I loved it so much that I made it for a recent family dinner!

If you can’t find smoked haddock, go for an all-natural, firm smoked fish such as cod or coley. I also used Irish cheddar cheese.

Disney Recipe (and Happy Hour!): Monorail Drinks from Top of the World Restaurant at Disney’s Contemporary Resort

I have an old souvenir book from my first trip to Disney in the late seventies. And while it’s super fun to look through the whole thing, some of my favorite images are from Disney’s Contemporary Resort.

It’s here that I first learned about Top of the World, the restaurant that once occupied the spot that California Grill calls home these days.

Well, the seventies glamour that epitomized the Contemporary may have given way to a sleek mix that is both modern and retro at once, but we don’t have to look too far to bring some of those fun days back. Thanks to Disney cookbooks, their cocktails live on!

That’s right! I’m talking about those famous and delicious Monorail Drinks!

If you love retro Disney cocktails like we do (hellooooo, Kungaloosh!), then you’re going to really love this post. Because we’re not giving you just one recipe, but three! Seriously — how much cooler will your next party be?? Very. You’re welcome.

Disney Recipe: Strawberry Twists from Maurice’s Treats in Disneyland

I’m missing Disneyland, and all the fabulous food that you can get there today. But I’m also seriously craving a treat to go with my tea, so I think it’s high time to discuss one of the newer pastries that you can get in the Happiest Place on Earth.

I’m talkin’ Twists. You can get them at Maurice’s Treats in Fantasy Faire, the newly opened Disney Princess headquarters in the park.

And while they come in different varieties — both savory and sweet — we’re going for Strawberry Twists today. Perfectly tender puff pastry, layered and twisted with homemade strawberry jam.

Disney Recipe: Gratin de Macaroni from Les Chefs de France in Epcot

Macaroni and Cheese — that glorious food that is both side dish and main dish.

But one of my favorite grown up versions is the baked Gratin de Macaroni at Les Chefs de France in Epcot’s France Pavilion.

The dish is so well loved that it’s even made its way onto the menu over the years for the Epcot Food and Wine Festival in the France Marketplace Booth. Will it make the cut for the 2014 Food and Wine Festival? Only time will tell!

But for the mac and cheese lover, this dish has everything! Sharp, tangy Gruyère cheese, golden crust, and it’s plenty big enough to share — if you want to! (Confession: Usually I don’t want to.)

But what are you to do if your next advance dining reservation for this wonderful spot is months off, and you’re craving some of this awesomeness, like, yesterday???

DIY Disney Recipe: Shrimp Tacos from the Epcot Food and Wine Festival

Shrimp Tacos are on the menu today! Our guest chef Carol provides in-depth instructions to a dish featured at the Mexico Marketplace during the Epcot Food and Wine Festival at Walt Disney World.

DIY Disney Recipe -- Crispy Shrimp Tacos

I don’t know about you, but the Epcot Food and Wine Festival season is my absolute favorite time of year to visit the parks at Walt Disney World. The weather starts cooling off just a bit (for us Floridians, 80s is definitely cooler)! Walking around the World Showcase sampling amazing food from many different countries is a great way to welcome Fall! If you’ve never been to the festival or are planning a visit, check out the end of this recipe to learn more about the festival along with a few helpful tips to maximize your journey!

I have to say, there are way too many great dishes to actually pick a favorite, but I can tell you that we LOVE the marketplace at Mexico. You HAVE to try the mango habanero margarita while visiting. It’s one of my favorite festival drinks of all time and is probably the most unique pairing of flavors in a drink that I’ve ever had. It pairs so well with the tacos from this marketplace, which by the way are amazing! They taste so fresh, and with a rib eye taco and a tempura shrimp taco to try, you learn quickly that this is definitely a gourmet food-lovers paradise!

I am excited that the festival sells a cookbook each year. It’s filled with classic festival recipes and updated each year with a few new ones, too! It’s a great way to keep the festival going year round in our house by making fun dishes that we tried on our journey around Epcot’s World Showcase. Luckily, the shrimp taco recipe is in my new 2013 festival cookbook!

I’ve already made this dish twice since visiting last year. Hopefully these tacos will get your family excited about visiting the festival or bring back great memories of your last trip to Epcot’s Food and Wine Festival. These fun little tacos are very easy to make, so let’s get started!

Disney Recipe: Chocolate Crusted Key Lime Tart from Disney World’s Grand Floridian Cafe

If it were up to me, I’d have a slice of Key Lime Pie Every. Single. Time. I set foot in Florida.

Fortunately, Disney has me covered with lots and lots and LOTS of options for this favorite!

But one of the best comes with a fun twist, thanks to the extra special crust. I’m talking about the Chocolate Crusted Key Lime Tart at the Grand Floridian Cafe in Disney’s Grand Floridian Resort and Spa.

Big on equal parts richness, sweetness, and sour power, this is a great version of the Sunshine State classic. I’ve always loved lime and chocolate together!
