…yep, we’re talking about Gideon’s Bakehouse! This spot in Disney Springs has different seasonal cookies each month, and any time there’s a new one, we make it a point to stop by and try it out. It’s an incredibly popular spot, and the line to get in can be a multi-hour wait on the busiest days. But is that line worth the trouble for the NEW February cookie? Let’s find out!
Gideon’s Bakehouse in Disney Springs is in its ELEMENT during the entire month of October. For one thing, it’s Halloween season, and Halloween and Gideon’s Bakehouse go together like milk and cookies. But October is also the official birthday month of Gideon’s Bakehouse. Happy birthday, Gideon’s!

One of our favorite places to grab a treat and some coffee is Gideon’s Bakehouse in Disney Springs. This dark academia-inspired bake shop is a fan-favorite for a reason. What particularly draws people in are the giant, gooey, delicious cookies that are sold here, and every month, a new special cookie is highlighted on the menu and sold in the shop. This makes things a bit more exciting! Well, it’s officially August (How is 2023 flying by so fast?!) and another monthly cookie is up for grabs at the shop.
