DIY Disney Recipe: Elderflower Cocktail

If you spend any time checking out the menus of Disney restaurants, you’ll notice that St. Germain Liqueur is popping up a lot these days!

And with good reason! St. Germain is a French liqueur that’s made from elderflowers. The delicate, sweet taste is very unique and seems to be taking Disney World by storm.

We’ve recently had Elderflower Cocktails at the Epcot Flower and Garden Festival (where it’s made with elderflower syrup) as well as for brunch at Raglan Road.

With flavors that remind me of grapefruit and honey, this liqueur makes for a lovely warm weather cocktail. So for a recent family gathering, we decided to give it a try!

Disney Recipe: Cottage Pie from Epcot’s Rose and Crown Pub and Dining Room

OK, I have a really funny story about Rose & Crown’s Cottage Pie.

When I was tiny and my parents took us to Disney World, we ate “in England” (I know it’s the UK, but back then we just called it England) at Epcot’s Rose and Crown Pub and Dining Room. My big brother ordered the Cottage Pie and fell in love with it! My dad got the recipe and made the dish at home.

Well, my palate had not yet expanded to include Cottage Pie, and I refused to eat it! (Can you imagine?!) I was sent to bed without dinner, and apparently I learned my lesson! ;-)

Luckily, my taste buds have matured…and I’m excited to share the recipe for this dish with you today! Like everything else on the menu, the Cottage Pie has an authentic flavor that reminds me of home cooked food of the British Isles.

DIY Disney Recipe: Konk Kooler from Disney Cruise Line’s Castaway Cay

Welcome back guest chef Carol E. with a Do It Yourself Recipe for the Konk Kooler, an exclusive adult beverage for Disney Cruise Line guests visiting Castaway Cay.

School was supposed to train us all for the real world, right? Then how come we don’t get summer, Christmas break, spring break and other various holidays off in the real world? They prepped us for real life and then took it all away when we graduated! :)

You might agree that summer time is the worse. We’re stuck sitting at work, when we could be on vacation…like visiting Orlando or Anaheim or better yet, sailing on a Disney Cruise!

Well here’s to figuring out how to have summer break even when we are working and can’t take a vacation!

Luckily for you, I think I may have found the solution!!! ;) Thanks to my first ever Disney cruise last year, I was introduced to the Konk Kooler…the signature drink on Disney’s magical private island — Castaway Cay (Bahamian word pronounced Key).

There is no place like Castaway Cay, with it’s beautiful beaches, kids area, and a private adult only beach where you can really enjoy a Konk Kooler!

DIY Disney Recipe: Nebraska Corn Chowder from Storytellers Cafe

This week, guest chef Carol returns with one of my FAVORITE recipes! This time she cooks up the Corn Chowder from the Storytellers Café at the Grand Californian in the Disneyland Resort!

So, I’d never been to Disneyland California until just recently! I know, I know, but please hear me out before you judge! I grew up in Central Florida…in Walt Disney World’s backyard.

But recently, I made my first trip to Disneyland! It was just like the commercials…you know with all the families making memories together! We were there with my husband’s family including our two cute, adorable li’l nieces! I couldn’t wait to wear those fun Family Reunion pins.

The first thing I did when I found out we were going was make my foodie list…of course! I also dug into my Disney cookbooks to start making fun dishes at home to get us excited about the trip.

I was excited to find several fun recipes from Disneyland California in my Cooking with Mickey and the Disney Chefs cookbook. The Storytellers Cafe Corn Chowder definitely caught my eye, since my grocery store is full of fresh, sweet corn right now. The recipe is served fresh every day in the Storytellers Café at Disneyland’s Grand Californian Resort, and it’s been on the menu since the restaurant opened.

Disney Recipe: Clam Chowder from Disney World’s Liberty Tree Tavern

UPDATE: Thanks to reader Elizabeth for calling our attention to an error in the recipe! We consulted one of our favorite Mickey Cookbooks to bring you the correct details!

One of my husband’s fa-vor-ite dishes in Disney World is this super creamy clam chowder from Liberty Tree Tavern in the Magic Kingdom!

It’s a New England style clam chowder, which means it’s made with milk and ends up creamy instead of brothy in the end. This delicious goodie has been a staple on the Liberty Tree Tavern menu for years, and it’s a guest favorite.

DIY Disney Recipe: Pollo A Las Rajas from Epcot’s San Angel Inn Restaurante

Guest chef Carol E. takes us to Epcot’s San Angel Inn Restaurante this week. And she’s sharing two different ways to make the guest favorite Pollo A Las Rajas!

My husband and I absolutely love Mexican food, so one of our favorite restaurants to visit in Epcot’s World Showcase is the San Angel Inn inside Mexico’s Mayan pyramid. If you find yourself lucky enough to visit this restaurant, ask for a table close to the river which runs through the back of the restaurant.

We’ve visited San Angel Inn several times, but I was recently introduced to what has quickly become one of my favorite dishes in all of Epcot! It’s called Pollo A Las Rajas!

As soon as I got home, I started flipping through all my Disney cookbooks to find this recipe. I was told it has been a staple on their menu since the beginning, so I was excited to learn that the recipe was printed in the Cooking with Mickey and the Disney Chefs cookbook!

You might be thinking, I can’t even pronounce this, how am I supposed to make this dish?! Don’t be intimidated…we’ll cover what it all means before we get started making it!

Pollo is the Spanish word for chicken (pronounced Po-yo). A Las Rajas, pronounced awe las (like Las Vegas) raw-hoss (like boss with an h instead of a b), means cracks or splits in Spanish, and refers to the skin of the roasted poblano pepper that we will be “cracking” the skin off of as we roast it in hot oil. So there you go, Pollo A Las Rajas is a super easy dish to make for dinner and is a fancy Spanish phrase for cracked pepper chicken!

I do have to say after looking over the recipe, I was a little disappointed. It seems they have changed the recipe that they actually serve now in the restaurant. I wanted to try the original recipe that was listed in the cookbook, but I was already in love with the dish they served me a few weeks ago in the restaurant. What a dilemma!

The only way to solve this problem is to make both dishes, so that’s what we’ll do! Below you’ll find the original recipe first and then the changes that the restaurant has made to make this dish now. We’ll meet up at the end to discuss! :-) Let’s get started!

DIY Disney Recipe: Key Lime Pie from Olivia’s Café at Disney’s Old Key West Resort

DFB guest chef Carol E. returns today with a traditional recipe for the Key Lime Pie from Olivia’s Café at Disney’s Old Key West Resort. Get your baking supplies ready!

Being a Florida native (Yes, native!! I was one of about 7 people actually born here…everyone else is a transplant. Ha!), I was excited to dive into this recipe!

Key Lime pie is one of my all-time favorite desserts! Did you know that Key lime pie is the official pie of the state of Florida? That’s right, not only are we awesome because we have Walt Disney World in our state, but we also have our own official pie! Florida rocks! :-)

Even better, you can get our official state pie at Walt Disney World — and this is one of the best versions of it on property! This Florida tradition is served perfectly chilled every day at Olivia’s Café!

Key Lime Pie Recipe

While there are a lot of different recipes for Key lime pie, the traditional one is the best! It only takes three ingredients to make the pie filling. If you make it right, it will be pale yellow in color and it will have the perfect balance of creamy sweet and tart goodness.

I was excited to find the traditional Key lime pie recipe from Olivia’s Café in the Cooking with Mickey and the Disney Chefs cookbook to share with you!

While Olivia’s Café has taken the pie to the gourmet side now by making it in an individual “tart” style and adding a meringue topping with dollops of raspberry and mango purees, we’ll be sticking to their original recipe from the cookbook — topped off with whipped cream.

So let’s get baking! But before we get started, I do want to warn you that this is a plan ahead recipe. You need at least 3-4 hours in the fridge, but better if left in overnight before serving!

It’s actually a super quick and easy recipe to make. It will take you more time to cool and chill the pie than it will to actually make it!

Disney Recipe: Chicken Pot Pie From 50s Prime Time Cafe in Disney’s Hollywood Studios

I love when Disney does comfort food, and there’s no better place to get it than 50s Prime Time Cafe at Disney’s Hollywood Studios!

Between keeping our elbows off the table and finishing our veggies, this is one of our favorite spots because of the homestyle foods and amazing atmosphere. Just check out some of our readers’ favorite moments from 50s Prime Time!

DIY Disney Recipe: Cobb Salad from The Hollywood Brown Derby

We’re thrilled to welcome back DFB guest chef Carol E.! This week, she shows us how to create the famous Cobb Salad from The Hollywood Brown Derby. Get your forks ready!

One of our favorite parks at Walt Disney World is Disney’s Hollywood Studios (or MGM if you still can’t get over the name change ;). And the Hollywood Brown Derby restaurant is one of the main reasons we LOVE this park.

You walk in and it feels like old Hollywood! It’s fun to see all the sketches of famous celebrities lining the walls.

Stars like Lucille Ball, Bette Davis, Charlie Chaplin, John Wayne, and hundreds of other actors of an era gone by have dined at the original restaurant in Hollywood and made it the place to be in that town.

The sketches lining the walls are one of the things that made the original Hollywood Brown Derby famous worldwide!

But it’s not a trip to the Hollywood Brown Derby without trying the Cobb Salad! As the story goes, owner Robert Cobb was raiding the fridge at the restaurant late one night seeking to put together a midnight snack for theater magnate Sid Grauman (you know, the famous Grauman’s Chinese Theater).

He chopped up a little bit of this lettuce and that lettuce. Then he took leftovers of bacon, egg, avocado, blue cheese, turkey, and whatever he could find in the kitchen. He chopped it all up, mixed up his own dressing, and threw it all into a bowl. Cobb’s salad became an overnight sensation when Sid came in the next day to order it again!

I was so excited to find the original Hollywood Brown Derby Cobb Salad recipe in the Cooking with Mickey and the Disney Chefs Cookbook! Let’s make it!

Salad Ingredients

*See below for the A Few Lessons I Learned section for more about these ingredients.
-1 cup chopped iceberg lettuce leaves, washed and spun dry
-1 cup chopped chicory leaves, washed and spun dry*
-1 cup tender sprigs of watercress, washed and spun dry
-1 pound poached turkey breast, finely chopped*
-2 medium-sized, ripe tomatoes, peeled, seeded and finely chopped
-1 avocado, peeled, seeded and finely chopped -½ cup crumbled blue cheese (about 2 ½ ounces)
-6 strips bacon, cooked crisp, drained, and crumbled*
-3 hard boiled eggs, peeled and finely chopped
-2 tablespoons snipped fresh chives
-1/2 cup bleu cheese, crumbled
-½ cup The Hollywood Brown Derby Old Fashioned French Dressing (not the orange French dressing we are used to, more like a vinaigrette). See Recipe below.
-Chicory and watercress sprigs for garnish!

Yield: 4-6 Servings

-2 tablespoons of water
-2 tablespoons red wine vinegar
-1 tablespoon freshly squeezed lemon juice
-½ teaspoon Worcestershire sauce
-½ teaspoon salt, or to taste
-½ teaspoon minced garlic (one clove)
-¼ teaspoon of sugar
-1/8 teaspoon of freshly ground black pepper, or to taste
-1/8 teaspoon dry English mustard
-1/3 cup vegetable oil
-2 tablespoons olive oil

Yield: About ½ Cup

DIY Disney Recipe: Crème Brûlée from Narcoossee’s — Blowtorch Optional!

Please welcome DFB guest chef Carol E.! She’s tempting us this week with a delicious Crème Brûlée recipe from Disney’s Grand Floridian Resort & Spa. So, let’s dig in…

My husband and I love exploring Disney restaurants since we are lucky enough to have Walt Disney World in our backyard. On one of my birthdays, he surprised me with dinner at Narcoossee’s at Disney’s Grand Floridian Resort and Spa!

I can still remember the taste of the real vanilla bean in the crème brûlée! It was so rich and creamy. Nothing like anything I had ever tasted. The perfect ending to the perfect meal!

Disney Creme Brulee Recipe

I want to share with you that wonderful memory of crème brûlée filled with the taste of fresh vanilla bean and topped off with a lot of Disney magic!

I found the actual recipe from the Grand Floridian Resort and Spa in the Cooking with Mickey and the Disney Chefs cookbook.

Before we get started, I do want to warn you that this is a plan ahead recipe. You need at least 3-4 hours in the fridge, but better if left in overnight before serving.

I have never made crème brûlée before, so at the end of the recipe below, I posted a few extra notes that may help you if this is your first time making it, too. By the way, this is my first and only batch so far, and it turned out perfect!

Let’s get started! Here’s your shopping list:

Ingredients — Makes 8 Servings

-2 Cups Heavy Cream

-1/2 Cup Milk

-1 Cup Sugar Plus a 1/4 cup for Sprinkling

-2 Vanilla Beans

-6 Large Egg Yolks

Instructions

-Preheat the oven to 250 degrees Fahrenheit.

-Take 2 bowls and separate 6 egg yolks from the whites. Place the egg yolks in the large mixing bowl. Set mixing bowl aside. (Keep the egg whites to make a fantastic egg white omelet tomorrow.) :)

-Take 2 Vanilla Bean pods and cut in half lengthwise with a very sharp knife. Scrape seeds with the tip of the knife.
