Ah. We knew the day would come…the day that we started craving some of those wonderful dishes that we’ve had a chance to enjoy at the 2014 Epcot Food and Wine Festival.

While we’ve enjoyed some truly delicious flavors at this year’s festival, we had our favorites from the very beginning!

And one of the sweets we don’t think you should miss is the Fresh Baked Carrot Cake with Craisins® and Cream Cheese Icing.

Served at the Hops & Barley Marketplace Booth, this is one of the best entries into the Disney Carrot Cake Arena we’ve ever sampled!

Warm and moist, the cake itself is chock-full of goodies. Dried cranberries give the mix an unexpected tang.

And the Icing. You know that amazing Warm Cream Cheese Icing you sometimes find on cinnamon rolls?

Given our love around here for Carrot Cake, we were on the fence about whether this one would be mention-worthy or a total snoozefest. I’m happy to say, it’s amazing.

Disneyland DIY Recipe: Red’s Apple Freeze From the Cozy Cone Motel

It’s September! Yay for cooler temperatures, right??

Well…maybe not quite yet. But we’re all dreaming of Fall flavors, even if the mercury is still registering in the 80/90 (or higher) range.

If I were in Disney California Adventure, I’d just mosey on over to Cozy Cone Motel and grab a cold one at Cone Number 4. :-)

Nah. I’m not talking about that kinda cold one. I have something even better! (Well. I think so, anyway.) It’s Red’s Apple Freeze to the Rescue!

But since I am not, in fact, anywhere near Disneyland (sigh), I’ll have to make do and make my own. And we can SO do that.

It looks a little like beer, doesn’t it? But this is a frosty beverage even the littlest in your company can enjoy. This concoction combines sweet and tart — no-sugar-added frozen apple juice flavored slightly with marshmallow, and topped by a creamy, passion-fruit froth. Yep. It sounds weird. But it works!

(And yes…you Walt Disney World Lovers…feel free to call it Le Fou’s Brew and dream that you’re in Gaston’s Tavern if you’d like. Same difference. :-) )

Epcot Food and Wine Festival Recipe: Grilled Verlasso Salmon with Quinoa Salad and Arugula Chimichurri

If you’re like us, you’re already counting down the days until the Epcot Food and Wine Festival Begins!

If you haven’t already done it, mark your calendars for September 19 — the date that the food and fun gets underway!

Recently, we had the opportunity to see and taste some of the brand new dishes that will be featured at this year’s festival.

Today, we have a recipe for one of our favorites — Grilled Verlasso Salmon with Quinoa Salad and Arugula Chimichurri. The dish will be featured at this year’s new Patagonia Booth.

It’s an especially interesting dish, because the Salmon is sustainably farm-raised. In fact, it’s the first and only ocean-raised farm fish to receive the “Good Alternative” buy ranking from the Monterey Bay Aquarium’s Watch Group.

Disney Recipe: Macaroni and Cheese from Jiko at Disney World’s Animal Kingdom Lodge

I have a super special treat for you today!

I know I’m not the only person in love with the Macaroni and Cheese at Jiko, right? This signature restaurant at Disney’s Animal Kingdom Lodge — and this dish in particular! — regularly tops my list when I’m visiting Disney World.

And when you run into me having dinner here, chances are better than great that I’ll be enjoying their Oak-Grilled Filet with a side of their amazing Mac and Cheese.

While the filet is a mainstay on their menu, the side dishes that it’s paired with tend to change up regularly. But Jiko created a legend with the filet and cheesy goodness combo; it had legions of fans! So normally, even if the mac and cheese isn’t on the menu, you can request it.

Disney Recipe from the Vault: ‘Ohana’s Cheesy Scalloped Potatoes

I have been known to post an ode or two to extinct Disney foods. And one of my most missed dishes are the Cheesy Scalloped Potatoes that used to be a fixture at ‘Ohana at Disney’s Polynesian Resort.

These potatoes — in all of their creamy, cheesy goodness — are no longer served at ‘Ohana. In their place, you’ll find a perfectly, well…fine…bowl of Lo Mein, noodle-y tangle.

Fine. But they’re no cheesy potatoes.

So imagine how the skies opened and the heavens sang when I recently ran across this recipe for the potatoes that we all knew and loved!

Now, I don’t see any shortening here, but everything else looks pretty fantastic. So I’m going out on a limb and am planning to give them a try.

Disney Recipe: Smokie City from Raglan Road Irish Pub and Restaurant PLUS New Signature Dinner Announcement!

Time to dig into another delicious dish at Raglan Road!

The authentic Irish pub, located at Downtown Disney in Orlando, is one of our favorite spots for its warm atmosphere and fantastic live entertainment. But the food is incredible too. Fans obviously agree that it’s the total package — the pub was awarded Best Restaurant honors by Orlando Magazine earlier this year.

And Chef Kevin Dundon has knocked it out of the park on this one. (Well, he does that quite often, but that’s beside the point.) I first had Smokie City — a chunky, hot, cheesy dip that features potatoes and the rich flavors of smoked fish — at the recent Signature Dinner that I attended at Raglan Road. Chef Kevin was on hand to present each course, and while they were all first rate, this one was my favorite. I loved it so much that I made it for a recent family dinner!

Disney Recipe (and Happy Hour!): Monorail Drinks from Top of the World Restaurant at Disney’s Contemporary Resort

I have an old souvenir book from my first trip to Disney in the late seventies. And while it’s super fun to look through the whole thing, some of my favorite images are from Disney’s Contemporary Resort.

It’s here that I first learned about Top of the World, the restaurant that once occupied the spot that California Grill calls home these days.

Well, the seventies glamour that epitomized the Contemporary may have given way to a sleek mix that is both modern and retro at once, but we don’t have to look too far to bring some of those fun days back. Thanks to Disney cookbooks, their cocktails live on!

That’s right! I’m talking about those famous and delicious Monorail Drinks!
