DIY Disney Recipe: Crème Brûlée from Narcoossee’s — Blowtorch Optional!

Please welcome DFB guest chef Carol E.! She’s tempting us this week with a delicious Crème Brûlée recipe from Disney’s Grand Floridian Resort & Spa. So, let’s dig in…

My husband and I love exploring Disney restaurants since we are lucky enough to have Walt Disney World in our backyard. On one of my birthdays, he surprised me with dinner at Narcoossee’s at Disney’s Grand Floridian Resort and Spa!

I can still remember the taste of the real vanilla bean in the crème brûlée! It was so rich and creamy. Nothing like anything I had ever tasted. The perfect ending to the perfect meal!

Disney Creme Brulee Recipe

I want to share with you that wonderful memory of crème brûlée filled with the taste of fresh vanilla bean and topped off with a lot of Disney magic!

I found the actual recipe from the Grand Floridian Resort and Spa in the Cooking with Mickey and the Disney Chefs cookbook.

Before we get started, I do want to warn you that this is a plan ahead recipe. You need at least 3-4 hours in the fridge, but better if left in overnight before serving.

I have never made crème brûlée before, so at the end of the recipe below, I posted a few extra notes that may help you if this is your first time making it, too. By the way, this is my first and only batch so far, and it turned out perfect!

Let’s get started! Here’s your shopping list:

Ingredients — Makes 8 Servings

-2 Cups Heavy Cream

-1/2 Cup Milk

-1 Cup Sugar Plus a 1/4 cup for Sprinkling

-2 Vanilla Beans

-6 Large Egg Yolks

-Preheat the oven to 250 degrees Fahrenheit.

-Take 2 bowls and separate 6 egg yolks from the whites. Place the egg yolks in the large mixing bowl. Set mixing bowl aside. (Keep the egg whites to make a fantastic egg white omelet tomorrow.) :)

-Take 2 Vanilla Bean pods and cut in half lengthwise with a very sharp knife. Scrape seeds with the tip of the knife.

-In a 2 quart saucepan, bring the heavy cream, milk, sugar, vanilla beans and vanilla bean seeds just to a boil over medium heat. Mix all of these items together, but don’t [Read more…]

Review: Wolfgang Puck Express in Downtown Disney Orlando

Time to head back to one of my favorite counter service spots in Disney World — Wolfgang Puck Express!

WPE offers consistently delicious food in an atmosphere that may make you think you’ve wandered into a table service restaurant. And with locations in both the Marketplace and West Side ends of Downtown Disney, you’re never far from one of their excellent meals.

Normally, it’s the Marketplace location that we favor as it’s bigger and has much more seating. But today we decided to give the West Side location a try. (If you’d like to see the details of my last Wolfgang Puck Express Marketplace visit, click here.)

Located just next to Wolfgang Puck Cafe and Dining Room, this location offers great eats for everyone. From grab and go, to pizza and more, there are really some incredible options here.

Wolfgang Puck Express West Side is impossible to miss, situated across from Splitsville and the AMC Theatre. You’ll find the entrance tucked just to the left of the restaurant’s main door.

I enjoy visiting WPE during the day. While the restaurant takes on a chic, modern vibe at night, the sun streaming in during daylight hours makes for a bright, cheerful spot.

Of course, there is also outdoor seating and this busy area offers primo people-watching opportunities. The ceiling fans and overhang make it quite comfortable as long as you’re not visiting during the height of summer.

Review: The Hollywood Brown Derby at Disney’s Hollywood Studios

The Hollywood Brown Derby at Disney’s Hollywood Studios is a little gem in the middle of a busy theme park.

When it was time to meet up with friends recently for a quiet dinner during our otherwise frenzied Epcot Food and Wine Festival trip to Disney World, I was happy when we all agreed to head there for a late night bite. While the restaurant can be a bit inconsistent (I tend to hear both good and bad reviews of this place), I’ve had good experiences on my visits.

I hoped that it would continue to measure up to the pedestal I have it on! Let’s head into that fabled dining room, home to Hollywood’s Golden Age elite, and see if it does…


If you haven’t had a meal at The Brown Derby, it’s time to head on over. I waited a long time before I took in my first meal there, and once I did, I was sorry I hadn’t tried it sooner.

Your journey back in time to the Golden Age of Hollywood begins before you enter the restaurant. The grand entrance beneath the classic red awning looks like something right out of early 20th century Hollywood.

And that is, of course, intentional. The Brown Derby at Disney’s Hollywood Studios was inspired by the restaurant located at the famous corner of Hollywood Boulevard and Vine Street.

Inside the waiting area, the decor is tasteful and clean Spanish Mission, with light walls and dark wood accents. A few comfy leather club chairs might be available for your wait if you’re lucky.

You also start to glimpse the famous collection of caricatures that line walls throughout the restaurant.

Disney Recipe: Maple Crème Brûlée from Epcot’s Le Cellier Steakhouse

I’ve tried a lot of Disney Crème Brûlée, and this one is definitely near the top of the list!

Time to head over to Epcot and into fan (and DFB!) favorite Le Cellier Steakhouse for today’s Disney recipe!

The Maple Crème Brûlée here has got to be one of the most-often ordered desserts on the menu, and it’s very clear why! The super creamy custard has exactly the right amount of sweet maple flavor — and it’s perfect for the holidays!

So while we can’t provide a Moosehead or a serenade by Off Kilter to complete the virtual trip to Epcot’s Canada Pavilion, this decadent dessert will go a long way to putting a smile on your face!

Entree Duo and PB&J Creme Brulee at Flying Fish Cafe on Disney World’s Boardwalk

Any time I have the chance to dine at Flying Fish Cafe in Disney World’s Boardwalk Inn Resort, I take it! I love this restaurant, and it always manages to surprise me with its clever and innovative menu.

I dined there in July, and while I’m not going to do a full review of that meal, I needed to share these awesome menu items with you just in case you’re headed over. I wish I had this meal to do over again, because I’d definitely order the same thing!

Get these on your must-eat list, stat!

Well, Flying Fish Cafe has two signature entrees…can you guess what they are? ;-) Yep, the Char-Crusted Strip and the Potato-Wrapped Red Snapper are the menu’s highlights, and Flying Fish has done us all a favor and put them together on one plate!

The Potato-Wrapped Snapper includes Leek Fondue with a Veal Glace, Red Wine, and Cassis Butter reduction; while the Char-Crusted Angus New York Strip comes with Fingerling Potatoes, Hericot Vert, Young Carrots, and Bermuda Onions, and an applewood-smoked Bacon Mustard Seed Vinaigrette and Classic Sauce Foyot (hubba hubba!).

Review: Cream Puff, Chocolate Eclair, and Creme Brulee in Epcot’s France

Every once in a while, a dining spot comes along that screams indulgence! And when you are traveling around the World in the space of a few hours at Epcot, it is imperative that you sample some of the World’s best treats.

Desserts in Epcot’s France Pavilion fall into this category perfectly. You simply must try something here. ;-) So off we go to savor the decadence that is the Boulangerie Patisserie!

When you head into the bakery, you’re overloaded with rows of pastries and sandwiches. We somehow managed to keep our selections to only three this day, starting with the luscious Cream Puff.

Come on. Look at this thing. Only people in commercials and books get to eat stuff like this, right? So you HAVE to try it!

This version starts with a lovely pate a choux, the fresh, rich-tender pastry that serves as a vehicle for all of that beautiful filling.

Speaking of the filling, it was wonderfully light and fluffy, and so much more than plain ol’ “whipped cream” in texture, flavor, and general “ooh la la-ness” (yes, that is now a thing). I don’t know if they use a European cream with a higher fat content, or if it’s just French magic, but this is fantastic.

Eat it slowly (you know…if you’re blessedly alone and your kids aren’t clamoring for a swipe of that filling!), and savor every delicious bite. :-)

Review: Tony’s Town Square

Today, we’re revisiting a Magic Kingdom institution, Tony’s Town Square for lunch!

In the past, Tony’s Town Square hasn’t wowed me. Decent food and a great view of the Magic Kingdom Town Square (and any parades going on out there!), but nothing to really pull me back to that spot. Read on to see if anything has changed…


The first thing that we noticed as we arrived for our Advanced Dining Reservation is that Tony’s has a brand new sign out front, depicting the jolly restaurateur himself! I knew this would be there after the recent renovations, but I really liked it!

One of the biggest draws of this Magic Kingdom hotspot continues to be the patio seating area. Tony’s is one of the few table service restaurants that offers an outdoor dining experience; and even on super hot Florida days, this is a great place to chill and enjoy a bite to eat!

Review: Lunch at Raglan Road Irish Pub

One of the most consistently delicious stops on the Walt Disney World trail, we recently had the pleasure of a lunch date with my parents at Downtown Disney’s Raglan Road.

Located right at the front of what is (kind of) Pleasure Island, the vibe from the Emerald Isle spills right onto the sidewalk and around the corner as you take in Raglan Road Pub and Restaurant, the adjacent Gift Shop, the Hole in the Wall watering hold, and Cookes of Dublin next door.

Even though we were there during Spring Break, we didn’t find early lunchtime to be too busy. We stopped in JUST before the restaurant switched to an updated menu, but luckily most of our choices can still be found amongst the new offerings.


You want authentic atmosphere? You got it. Much of the decor here is authentically Irish, and the bars themselves were shipped directly from Ireland.

The entrance to the restaurant is central, while there is outdoor seating to the left and a nifty gift shop to the right. If Raglan Road does have one shortcoming it would be that there aren’t many places to sit while waiting for your table. Fortunately, that wasn’t an issue for us that day.

The gift shop really is so cool! You feel like you’ve wandered right into a shop that was destined for Epcot’s World Showcase (had they ever built a separate Ireland Pavilion.)

Tons of Irish souvenirs and sauces from the restaurant are available here. This is also a nifty place to pick up some of Master Chef Kevin Dundon’s fantastic cookbooks, like Recipes that Work or Full On Irish, if you wanna recreate a little Raglan Road in your kitchen once you head home!

What you see in the restaurant itself really is a little slice of Ireland in the Florida sunshine. You’re surrounded by rich, dark woods and brass fixtures. Disney Food for Families: Foodie Farewell to 2011 — Crema Catalana Recipe

2011 was a pretty great Disney year for my family. We all made multiple trips to Walt Disney World, traveling as a whole family, in several smaller groups, and with friends. We also took an incredible combination Adventures by Disney and Disney Cruise Line trip to Europe over the summer. And I made a special trip to Epcot’s Food and Wine Festival with just my daughter Josie. This was her first F&W experience and our first mommy/daughter solo trip.

When looking for a way to commemorate and wrap up this year of awesome Disney experiences, of course our minds turned to food. We came up with the idea to find and make the Disney recipe that best represented 2011 for us. My girls flipped through our stash of Disney recipes and found a perfect choice: Crema Catalana!

Crema Catalana is sort of like the Spanish version of creme brulee, and the recipe we chose came from the 2009 official Food & Wine festival cookbook. This dish scored on two fronts, first because of the Food and Wine Festival connection, and second because the longest portion of our summer Adventures by Disney trip took place in Barcelona, Spain, the birthplace of the dish. While we were in Barcelona, we had four different versions of this local signature dish. We were eager to see if we could replicate it at home.

2 tablespoons cornstarch
1.5 cups whole milk, divided
2 egg yolks
1 teaspoon grated lemon peel
1 teaspoon grated orange peel
7 tablespoons granulated sugar, divided.
